Chicken parm has always been one of my favorite meals. Right up there with some homemade lasagna and baked ziti. Eating low carb, those types of dishes don’t work out too well. I have made low carb chicken parm, and while it is tasty I missed the breading from my normal favorite chicken parmesan recipe. I do love chicken parm casserole but needed something a bit different to add to my keto meal plans.

Once chaffles took off like crazy all over facebook the idea came to me to make a Chicken Parmesan Chaffle. It would give me the crispy breading I missed while being a low carb chicken parm recipe.

I taste tested this Chicken Parmesan Chaffle recipe on a friend of mine who doesn’t eat low carb and they told me they would for sure eat this just because it tasted so good!

To make things easier I used rotisserie chicken. If you don’t have one on hand you can use any cooked chicken breast for the chicken.
