Oven-Roasted Green Beans make the perfect side dish for any meal. Drizzled in olive oil and simply seasoned with salt and pepper, these beans turn out flavorful and perfect every time.

Confession: I am terrible at coming up with side dishes to go with our dinners each night. But lately, I have been LOVING roasted vegetables like these Oven Roasted Green Beans.

I feel like it really lets the flavor of the fresh vegetables come through.

I love that you only need the most basic ingredients – olive oil, salt and pepper – to make this quick side dish.

This same method works for all kinds of vegetables – broccoli, cauliflower, carrots, Brussels sprouts, squash, zucchini, and tomatoes (just to name a few – but the possibilities are endless!).

Do you have to cut the ends off of the green beans?

My mom always used to “snap” the ends off of fresh green beans and so I do, too. However, it really is your choice if you choose to remove the ends of the beans or not.

Some people feel that the ends of the bean are tough and some do not prefer to eat the “string” on the beans.

Instead of sitting and snapping the ends off the beans like my mom used to do, I like to wash all the beans and then line them up in a straight line on the cutting board. I then use a sharp knife to quickly trim off the ends.

I personally think that the beans look more appetizing with the ends trimmed off, but like I said before, it’s a personal preference.

How to make oven roasted green beans:

  1. Wash the beans. If desired, trim the ends off the green beans.
  2. Line a large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
  3. Place beans on baking sheet and lightly drizzle with olive oil. Also sprinkle generously with salt and pepper.
  4. Toss beans together on the baking sheet (you can use a large spatula, but I prefer to use my hands) until all beans are coated with oil and seasonings. Spread beans out in a single layer on pan.
  5. Cook at 400 degrees for 20-25 minutes or until beans are tender and slightly browned.

Can you use frozen green beans?

While I personally have never roasted frozen beans, everything that I have read says that you can but that you will need to add 10-15 minutes to the cooking time.

I have also read that you should rinse the frozen beans under cold water and dry really well before roasting because if you roast them from frozen, the extra moisture will make them mushy.

  • Toss with parmesan cheese
  • Squeeze fresh lemon juice on top
  • Add fresh garlic or garlic salt
  • Add fresh rosemary
  • Add balsamic vinegar
  • Add cooked and crumbled bacon

Ingredients

  • 2 pounds fresh green beans
  • 2 Tablespoons olive oil
  • 1 teaspoon salt, to taste
  • ½ teaspoon pepper

Instructions

  • Preheat oven to 400 degrees F.

  • Line large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.

  • Spread beans in a single layer on a large baking sheet and drizzle with olive oil.

  • Sprinkle with salt and pepper, then using your hands (or a large spatula), lightly toss beans until they are coated with oil and seasonings. Spread beans back out in a single layer.

  • Cook for 20-25 minutes, or until beans are tender and start getting brown spots on the outside.

Notes
